About Sake Council

Many travelers know it from loud bars and casual pours. The reality is deeper, slower, and far more refined.
Where it begins
Most of the world first encounters sake in casual bars. Loud rooms. Small cups. A quick pour with little ceremony.

Fine wine enjoys global reverence. Sake deserves the same. We believed there was room for a slower, more thoughtful format.

We created a home in Ebisu for those who want guidance, education, and a deeper journey into the work of brewers across Japan.

The craft
At The Sake Council, we believe 1 + 1 can equal 3. Our culinary team pairs with sommeliers to create dishes that elevate the sake.
The result is not just harmony. It is a new layer of flavor that appears only when both are tasted together.
Japan has 72 micro-seasons. We respect every one. Each dish is crafted to elevate the sake in your glass.

Our Philosophy
Washi paper walls and solid wood counters invite touch. They ground the experience.
Shadows shape the room and deepen focus. Light appears only where needed.
A quiet acoustic environment designed for conversation, reflection, and longer pours.
